PANINI WITH GRILLED VEGETABLES
grilled pork fillet, cheese (Russian or Holland), olives, mayonnaise, parsley and grilled vegetables – eggplant, zucchini, pickled paprika.
Prepare the grilled vegetables – cut zucchini and eggplant in 3 mm slices. Grill the eggplant and zucchini on hot grill or stove and marinate while they haven’t cooled. Make the marinade mixing oil, chopped garlic, ground black pepper and basil. You can also add balsamic vinegar. Grill the Panini until small lines are seen. Spread both sides with mayonnaise. Put the grilled vegetables, sliced pork fillet (or roasted meat), sliced olives, parsley and slices of cheese on one half of the bread. Put over the other half of bread, slightly press and grill or roast for 5–8 minutes in 180°C (or until cheese has melted).
